Paella Time!


I  just made this easy and quick paella using ingredients I already had. It was just the perfect dinner with a little drizzling of truffle oil. I didn't follow a specific recipe, I just sautéed chopped onions, garlic and sweet peppers in olive oil. Added the chicken, rice (I used vigo yellow rice), frozen green beans and adamame which is not what you would normally use in paella but it's what I had. I already had some deveined gulf shrimp (the shell and tail on), I marinated before hand and boiled for about 3 minutes. I peeled some and left some unpeeled and added it to the rice a little before it was done. I also used the water I boiled the shrimp in to make the rice.

It turned out delicious and it was so easy.
